Red Shed Malting

The sophisticated beer consumer is seeking more complex flavours and a better understanding of what goes into their craft beer. Red Shed Malting is the missing link in the chain between the barley grower and the brewmaster. Their family farm has grown barley in Alberta since 1929 and Red Shed Malting crafts a traceable, local, and specialized malt that brewmasters use to create beer with consistently more flavour.
SELECTION

Parkland Pale
With the rise of craft beer, consumers have demanded more from breweries. Isn’t it about time that brewers demanded more from their malt? Parkland Pale malt was created with the all-grain brewer in mind. The variety of barley used to make this malt was bred to focus on flavour instead of maximizing enzymes for adjunct brewing. Brewers can expect consistent conversion and lautering (lower beta-glucan and lower diastatic power) and better stability in packaged products (lower free amino nitrogen).

Penhold Pilsner
Low colour without sacrificing flavour! By selecting the right variety of barley with the right specifications, we are able to give this malt a full kiln regimen without picking up excessive colour. We are delighted with the result. This base malt will yield wort that is light straw in colour with flavours of arrowroot cookies or a healthy breakfast cereal with a splash of creaminess. Aroma’s are fresh baking with hints of honeydew melon.

Whiskey Jack
With high DP and high Alpha-Amylase, Whisky Jack is designed for use in distilling and brewing – especially for brews incorporating adjuncts. We’ve packed this malt with an army of enzymes that are ready to convert the extract effectively, efficiently, and with panache! For brewhouse efficiency, you’ve got a great partner with Whisky Jack.

Oat Malt
No cereal mash needed – these malted oats are ready to be thrown in with the rest of your grain bill as we’ve given the sugars a stern talking to (and they’re ready to get down to business.) These malted oats are known for the creamy mouthfeel they bring to your brews. Bringing additional enzymes and their husks to the mash, they’re ready for anything!

Wheat Malt
Our Wheat is homegrown on Hamill Farms and is made from Spring Red Wheat. For a fuller mouthfeel, bigger body, and lasting head, Wheat is a great addition to your brew. From traditional styles to modern hazy creations, brewers are big fans!

Rye Malt
Rye is known for imparting a slightly spicy flavour to both beer and spirits. Malted rye can help increase production efficiency when making rye whisky.

Rocky Mountain
Rocky Mountain malt is kilned at a higher temperature then our other base malts, which gives a deeper malt aroma and more defined flavour. Despite the higher kiln temperatures, it still maintains enough enzymatic power to work on its own. It’s a great compliment to our base malts and a nice substitute for a Vienna malt.

Kananaskis
Elevated kiln curing temperature elevates the malty characteristics of our Kananaskis: barley sweetness and fresh baked bread! We've tweaked the process on this malt to add some sweetness and even some fruit notes. This is a great replacement for European Munich malts. Use a little or use a lot! It can be used as a portion of the malt bill to add character and depth or it has enough enzymatic activity to use as 100% of the malt bill.

Biscuit Malt
Our drum roasted biscuit malt boasts aromas that are familiar to a hearty farm breakfast, with just the right amount of sweetness. Biscuit can be added in small amounts to add depth of flavour or as high as twenty-five percent or more of the total malt bill to really accentuate the toasty flavours. It is versatile enough to be included in almost any style of beer.

Amber Malt
Our freshly roasted amber is a versatile malt that adds depth and colour to hop-forward beers. Brewers also use it to increase complexity and add a nutty flavour to their malt-forward creations. Amber makes a great substitution for caramel malts when you are after less sweetness in your beer.

Light Chocolate Malt
Our light chocolate malt is great for adding flavour and aroma without being overpowering. It adds notes of marshmallows and coffee with a brown to dark brown colour. Let light chocolate be the secret ingredient in your next recipe.

Black Bird
We couldn’t be more proud to offer a fresh and local black malt! Use it for a colour boost, extra roasted flavour, or to offer a balance on the palate for sweetness. Its best friend is our Chocolate Malt – together they make a balanced flavour profile with cocoa and 70% dark chocolate notes.

Black Bear
Black Bear is our roasted wheat malt that provides a nice black colour without bitter astringency. Provides light coffee and dark chocolate flavours. Use in small quantities for colour adjustments.

Roasted Barley
This single origin, straight from the farmer, unmalted barley spends lots of time in our roaster helping it develop notes of rich chocolate and fresh coffee aromas. It has enough flavour to bolster stouts while having low enough astringency that it can be used for colour in black lagers or Cascadian Dark Ales.

Raw Wheat
Looking for better lacing and head stability, but your style doesn’t need more body or sweetness? From traditional Belgian styles to modern hazy beers, Raw Wheat is a great option to improve flavour, cloudiness, and head retention.

Chocolate Malt 500
Our chocolate malt is the Canadian solution for your brown ales, porters and stouts. Our roasting process adds notes of chocolate and coffee to the malt that comes through nicely when brewed.

Caribou Malt
This labour-intensive malt fully leverages the capability of our drum roaster. Applying intense heat to high moisture, green malt we get caramelization that achieves flavours that are distinct from other commercially available caramel and crystal malts.
